Tonight for dinner my wife and I went to Sam’s club and bought a huge block of feta for tonight. We used Mediterranean herbs and olive oil to cook the pork tenderloin for supper. We diced up kalamata olives with crumbled fetas and diced tomatoes. Then once the pork was baked through we scooped the topping over the juicy pork.
For our sides we made brussel sprouts and sauteed red potatoes as well. This is such a simple spin for a good pork recipe. The topping of feta,tomato, and kalamata olives is what makes this dish pop!
